Recipe of Roasted Bell Pepper sesame Quinoa


  • 1 cup Quinoa
  • 2 cups Water
  • Salt , to taste
  • 1 tablespoon Olive Oil
  • 1 Green Bell Pepper (Capsicum) , finely chopped
  • 1 Red Bell pepper (Capsicum) , finely chopped
  • 3 cloves Garlic , finely chopped
  • Salt , to taste
  • 1 teaspoon Black pepper powder
  • 1 teaspoon Lemon juice
  • 1tbsp flax seed
  • 3-4 mint leaves
  • 1tbsp coconut powder

Method :-

  1. To begin making the Roasted Bell Pepper Quinoa Recipe, wash the quinoa and set aside.
  2. In a pressure cooker, combine the quinoa with water, add salt, mix well and close the pressure cooker.
  3. Pressure cook the quinoa for 4 whistles and turn off the heat. Allow the pressure to release naturally.
  4. In a skillet, heat oil on medium flame, add the garlic and saute until it turns into a light brown colour.
  5. To this add rosemary, finely chopped bell peppers, salt and cook on high heat for a couple of minutes until the bell peppers soften a bit.
  6. Finally add black pepper powder and turn off the heat. Stir in the quinoa to the roasted bell peppers, add freshly squeezed lemon juice , sesame seed, and toss well.
  7. Once done, give the Roasted Bell Pepper Quinoa a taste, adjust the seasonings and transfer to a serving bowl.
  8. Serve Roasted Bell Pepper Quinoa Recipe .
